In order to enjoy its freshness to the full, it should ideally be drunk within a year of the vintage.
The specially selected grapes come from high hillside vineyards in Farra di Soligo, Farrò,
Solighetto and San Pietro di Feletto (at 180 – 350 meters above sea level), in the center of the Conegliano Valdobbiadene D.O.C.G. production zone. The vine training systems used are “Double-Arched Cane” and “Sylvoz”, with a plant density of 2800-3300 vines per hectare. The soils are a mix of clay and limestone.
Yield per hectare: A maximum of 13500 kilos per ha
Harvest: By hand, in the last ten days of September
Traditional white wine vinification with soft pressing; fermentation is slow (lasting approximately 15 days) at a controlled temperature of 17°-18° C; subsequently it is racked and stored at low temperatures in special thermo-regulated stainless steel tanks.
This is carried out using the Charmat Method of natural re-fermentation in pressurized tanks,
following the addition of yeasts: the process that is traditionally adopted for youthful, delicate, aromatic wines. The cycle of re-fermentation and maturation in these autoclaves lasts for 2 months.
Excellent as an aperitif, it is ideal for those who wish to enjoy a glass of wine at any time of day.
Apperance: Its color is straw yellow, with small, fine and persistent bubbles
Nose: Fresh, fruity and delicate
Flavor: Tangy, fresh and lightly acidulous, with a dry finish
